Information for a dissertation on site selection for offshore finfish aquaculture in Scottish waters

I am a postgraduate student at Durham University completing a vocational MSc dissertation on site selection for offshore finfish aquaculture in Scottish waters, in partnership with Ocean Ecology (a DNV company). 

Part of my analysis looks at proximity to supply-chain infrastructure, and I am trying to identify processing plant locations relevant to salmon aquaculture. I have been pointed towards the Approved Establishments Register and have filtered Section VIII for FFPP (Fresh Fishery Products Plant) and PP (Processing Plant). 

I understand the register reflects what each establishment is approved to handle rather than what it actually processes, so my question may sit outside the data you hold. If possible, I would be grateful to know whether all of these establishments handle salmon or only some, and if only some, which are the main ones associated with salmon. If that level of detail isn't something you hold, I would equally appreciate any direction towards a more suitable source.
