Ingredients

A large baked potato

½ small can of tuna (about 45g)

Two tablespoons of sweetcorn

One tablespoon of mayonnaise

An apple

Method

  1. You can cook the potato in the microwave or in the oven, depending on how much time you have.
  2. Prick the potato with a fork and then microwave for around 15mins, or cook in the oven for around an hour.
  3. Mix the drained tuna, mayonnaise and sweetcorn together and serve on top of the cooked potato.

Tips

  • If you want to reduce the calories and fat in this meal, you could use a reduced fat mayonnaise with the tuna.
  • You could also experiment with other fillings and salad or vegetables – why not try a small portion of left over chilli, or spicy chicken stew?
