Guidance on the legal requirements for the production of Mechanically Separated Meat (MSM)

Overview: Following the various court actions in relation to mechanically separated meat (MSM), this guidance aims to provide clarification on the Supreme court’s interpretation of the definition of MSM to ensure that businesses are complying with the law. The aim of this guidance is to explain how the definition of MSM in Regulation (EC) No 853/2004, Annex I, point 1.14 should be applied in Scotland. 

Target Audience: Food Business Operators (FBOs) who manufacture, process or handle MSM and/or meat preparations and local authorities/FSS operational staff that are responsible for enforcement of the hygiene regulations within these establishments.
