Ingredients

  • 100g lean beef mince
  • 1 onion, finely chopped
  • 1 clove garlic, finely chopped
  • 400g can of chopped tomatoes
  • 1 tbsp tomato puree
  • 1 tsp dried mixed herbs
  • ½ red pepper, chopped
  • 100g mushrooms, sliced
  • ½ carrot, chopped
  • ½ courgette, chopped
  • Pepper to taste
  • 70g (dry weight) wholemeal pasta
  • 2 slices of garlic bread

For the side salad (Serves 2)

  • ⅓ lettuce
  • 3-4 small quartered tomatoes
  • Two inches of sliced cucumber
  • ⅓ green pepper (cut into strips)
  • 2 spring sliced onions

For the fruit salad (Serves 4)

  • 1 sliced banana
  • 1 apple, sliced
  • 1 segmented orange
  • 4 quartered strawberries
  • 10 halved grapes
  • 1 sliced kiwi fruit
  • 100ml unsweetened orange juice

Method

  1. Heat the oil and brown the mince over a gentle heat, stirring to stop it from sticking.
  2. Add the onion to the mince and cook for 2-3 minutes.
  3. Add the remaining ingredients, bring the sauce to the boil, then lower the heat and simmer gently for 15-20 minutes.
  4. Add pepper to taste.
  5. Before the Bolognese is finished cooking, allow around 10-15 mins to cook your wholemeal pasta.
  6. Serve with the garlic bread.
  7. For dessert, have half of the fruit salad mixture and keep the other half to use another day.

Tips

  • If you are cooking for one, you can freeze the extra portions for a quick and easy evening meal another week.
  • This is quite a big meal with a high calorie content, so you don’t have to have all the sides and accompaniments if you don’t want to. If you do, avoid having this type of meal very often.
  • If you want to make a lighter version, you could substitute some or all of the beef mince for extra vegetables, or use soya mince.
